Veggie bruschetta

This is my personal “fast food”. Every time I don’t want to cook I open the fridge, look for veggies and prepare these croutons that are really yummy and healty. In this recipes you won’t find the amount of the ingredients, you just have to try and prepare it as you like, with whatever comes to your mind, or whatever you have in the kitchen. The basic ingredient is bread. Every kind of bread is suitable for this purpose. Sandwich bread, italian bread, baguette. To make it really tasty you will also need a melting cheese. Now the dish is basically ready.


Lay the bread slices on a baking tray. Cover them with every kind of cooked vegetables you like. I often use spinach, or chicory, grilled eggplants or zucchini, peperoni. Top the veggies with a sprinkle of salt and some cheese. Broil in the oven for about 5 to 8 minutes, until the cheese is completely melted and it’s golden brown. You can also broil the bread and, when golden brown, serve it with a fresh chopped tomatoes, origano, salt and extravirgin olive oil.
